Serves 4
INGREDIENTS:
4 Chicken breasts
4 Tbsp lime juice
1 Pkt fajita mix
1 Tbsp oil
2 Red onions
2 Red/yellow peppers
8 Tortillas (1 packet)
4 Tbsp low fat fromage frais
EQUIPMENT:
Chopping board
Sharp knife
Tablespoon
Teaspoon
Frying pan
METHOD:
Slice chicken into thin strips. Toss in lime juice and fajita mix
Heat the oil in a non-stick pan, add the onion and pepper and fry for 3 minutes until beginning to colour
Add the chicken and cook until chicken is white in the centre
Warm tortillas in oven, wrapped in foil, or in microwave for 1 minute on full power
Divide mixture between tortillas, top with salsa and fromage frais, and roll up and serve
