Corned Beef Hash

Serves 2-3

INGREDIENTS:

  • 1 Tbsp oil
  • 1 Large onion – chopped
  • 750g (1½lb) Potatoes – cut in chunks
  • 1 Large carrot - diced
  • 300ml (½pt) Beef stock
  • 1 x 325g (11oz) Can corned beef – cut in chunks
  • 2 tsp Dried parsley (optional)
  • 1tbsp Worcester sauce

EQUIPMENT:

  • Sharp knife
  • Shallow pan
  • Spatula
  • Measuring jug
  • Spoon
  • Chopping board
  • Wooden spoon
  • Tablespoon

METHOD:

  • Heat oil in a large pan and add onion. Cook gently, stirring occasionally, for a few minutes until softened
  • Add potato and carrot and stir
  • Pour in stock and season to taste
  • Add 1 tbsp Worcester sauce and parsley, if used. Simmer for 10-15 minutes until potatoes are tender and stock is absorbed
  • Gently stir in corned beef and heat to warm through
  • Put pan under hot grill 7cm (3”) from heat to brown top
  • Serve with broccoli or other vegetables
