Curried Lentil & Sweet Potato Soup

Serves 4

INGREDIENTS:

  • 1 Tbsp oil
  • 1 Large onion - finely chopped
  • 500g (1lb) Sweet potatoes - chopped & diced
  • 200g (7oz) Potatoes - chopped
  • 4 oz Lentils
  • 700ml (1.1/4pt) Vegetable stock
  • 1 Tsp Curry powder
  • ¼ Pt of creme fraiche
  • Pepper to taste

EQUIPMENT:



 

  • Tablespoon
  • Shape knife
  • Chopping board
  • Measuring jug
  • Large saucepan
  • Vegetable peeler
  • Blender

METHOD:

  • In a saucepan heat the oil, add the onion and cook until soft with the lid on
  • Add the sweet potatoes, the potatoes and curry powder, lentils and
    vegetable stock
  • Bring to the boil and simmer for 30 minutes until potatoes and lentils are soft
  • Cool a little then puree with a blender
  • Add pepper to taste
  • Serve with a swirl of creme fraiche
