Fruity Rice Pudding
Serves 4
INGREDIENTS:
60g (2oz) Pudding rice
600ml (1pt) Semi-skimmed milk
15 ml (1 tbsp) Sugar (optional)
½ Tin peaches in juice
½ Tin pears in juice
5ml (1tsp) Vanilla extract
EQUIPMENT:
Saucepan
Measuring jug
Tablespoon
Teaspoon
Scales
Stirring spoon
METHOD:
Put the rice, milk and sugar in a heavy bottomed saucepan
Bring to the boil, reduce the heat and simmer for about 30 minutes, stirring occasionally
Roughly chop the tinned fruit up and put in a pan with a little of the juice and bring to the boil for about 5 minutes
Mash the fruit and mix with the rice pudding when ready
