Serves 4
INGREDIENTS:
300g (11oz) Macaroni
100g (4oz) Peas
15ml (1tbsp) Oil
1 Small Onion - chopped
500ml (1pt) Semi skimmed milk
1 Level tsp mustard powder
2 Tbsp cornflower mixed to a paste
150g (6oz) Mature cheddar cheese - grated
Fresh ground black pepp
EQUIPMENT:
2 Medium saucepans
Wooden spoon
Sharp knife
Grater
Chopping board
METHOD:
Pre-heat oven to 200°C/400°F or gas mark 6
Heat oil in a saucepan and gently fry onions until soft
Cook the macaroni in boiling water according to the direction on the packet, adding the peas for the last 3 minutes of cooking time, drain
Bring the milk slowly to the boil and add the cornflower mixture and keep stirring until its starts to thicken and boil again
Turn off heat and add half of the cheese, mustard, black pepper and cooked onions
Mix the pasta and cheese sauce together and put into an ovenproof dish, sprinkle the remaining cheese over the top and bake in the oven until cheese is bubbling and golden
