Marvellous macaroni cheese

Serves 4


  • 300g (11oz) Macaroni
  • 100g (4oz) Peas
  • 15ml (1tbsp) Oil
  • 1 Small Onion - chopped
  • 500ml (1pt) Semi skimmed milk
  • 1 Level tsp mustard powder
  • 2 Tbsp cornflower mixed to a paste
  • 150g (6oz) Mature cheddar cheese - grated
  • Fresh ground black pepp


  • 2 Medium saucepans
  • Wooden spoon
  • Sharp knife
  • Grater
  • Chopping board


  1. Pre-heat oven to 200°C/400°F or gas mark 6
  2. Heat oil in a saucepan and gently fry onions until soft
  3. Cook the macaroni in boiling water according to the direction on the packet, adding the peas for the last 3 minutes of cooking time, drain
  4. Bring the milk slowly to the boil and add the cornflower mixture and keep stirring until its starts to thicken and boil again
  5. Turn off heat and add half of the cheese, mustard, black pepper and cooked onions
  6. Mix the pasta and cheese sauce together and put into an ovenproof dish, sprinkle the remaining cheese over the top and bake in the oven until cheese is bubbling and golden
