Spicy sausage pasta

Serves 2-4

Ingredients:

  • 1 Tbsp olive oil
  • 6 Good quality sausages (low fat)
  • 1 Onion - finely chopped
  • 1 Garlic clove - chopped
  • 1 Red Pepper
  • 400g Can chopped tomatoes
  • 1 Tsp oregano
  • 350g (12oz) Penne or rigatoni pasta
  • 1 Tbsp red pesto

Equipment:

  • Tablespoon
  • Large saucepan
  • Sharp knife
  • Chopping board
  • Non-stick frying pan
  • Tin opener
  • Teaspoon
  • Measuring scales

Method:

  1. Dry fry the sausages in the non-stick frying pan for about 8 minutes until brown
  2. Drain off any fat
  3. Remove from the pan and cut into 2.5cm (1 inch) pieces
  4. Fry onion, pepper and garlic in the oil for 5 minutes, add tomatoes, sausages and oregano, season to taste
  5. Cook pasta in boiling water for 10-12 minutes or just till tender
  6. When the sauce has thickened stir in the pesto, drain the pasta and return to the pan
  7. Stir in the sauce and serve immediately
