Wraps, pittas & dressings
Easy and fast lunch or dinner options
Vegetarian Wraps
To make a veggie wrap you can roast what ever veg you like, add a little fresh salad, I suggest:
grated carrot
splash of lime juice
salad dressing (see below for how to make it at home in a few minutes)
halloumi cheese (with some chili as an option)
some fresh coriander, this really boosts the flavor
Wrap the lot in those lovely tortilla wraps with some cous cous on the side.
Pitta breads
Pretty much the same as above, but you can add Thousand Island dressing and mayo or what ever sauce you like. With this you can use halloumi cheese. Just cut and add some chilli olive oil, put in the oven until, yes you guessed it, GOLDEN BROWN!
Salad dressings
The first salad dressing is a classic one and very easy to make.
Method
You can use an old jam jar with a good lid to shake up this mixture.
To a jar add:
Splash on lemon juice
Splash of lime juice
Tea spoon of honey
Tea spoon of mustard (whole grain if you have it)
Balsamic vinegar (about one third of the total mixture)
Olive oil (about two thirds of the total mixture)
Salt and pepper
Shake lots and serve- simple!
